Ingredients

Serves : 4
  • 1 kgs mixed vegetables(chopped and washed)


  • 2 sprig curry leaves


  • 1 tsp salt some to taste


  • 1 tsp turmeric powder


  • 1 cups daal


  • 2 cups water


  • 2 1/2 tsp chilly powder


  • 2 tsp coriander powder


  • 1 tsp cumins(crushed)


  • 1 tsp fenugreek(powdered)


  • 1/2 tsp asafoetida(powdered)


  • 1 piece taamarind(soaked in water)


  • 4 nos shallots(sliced)


  • 4 nos dry red chillies


  • 1 tsp mustard seeds

Directions

  • Wash and clean the vegetables.Cut these into square shapes.
  • Cook this partially in a cooker along with 1 sprig curryleaves, desired salt and turmeric powder. Keep this aside.
  • Cook daal in pressure cooker after adding required water.
  • Mix this with the cooked vegetables and again cook this.Cook in low flame only.
  • Mix chilly powder,coriander powder,powdered cumins,fenugreek powder and asafoetida powder in water and add this to the cooked vegetables.
  • Also add the soaked tamarind piece too.
  • Bring this to boil and gravy thickens ,season it.Sambar Ready
  • For Seasoning: Heat oil (coconut oil ) in a pan,splutter mustard seeds.
  • Add shallots and curry leaves.
  • Pour this to top of Sambar
